When one of my daughters was diagnosed with gluten sensitivity, I was relieved and shocked at the same time. I was relieved as finally we had a diagnose and it is much easier to face with something that you know what it is, and we were happy that she will not suffer anymore. But at the same time, it was a bit shocking, because we had to find new ways to cook and bake.
