
This is a super-easy recipe, and it was important to me to try something that is carb conscious and that I can fit into my diet. I typically eat this as a morning snack, stuffed with veggies and egg, sometimes tofu.
Calories: 56 kcal per 1 broccoli tortilla
Carbs: 6g/per tortilla
Ingredients (makes 2)
- 300 g frozen broccoli
- 10 g psyllium husk
- salt
- 1-2 tablespoon water
Instructions
- Measure the broccoli, no need to cook it. Boil water, and pour it onto the broccoli. Let it sit for 3 minutes.
- Add the salt and the psyllium husk, and the water. Start with a smaller amount of water and add more if needed.
- Blend it up.
- Place a baking sheet into the baking pan.
- Make two balls, and flatten them into round shape.
- Bake them in the oven for 18 minutes. Check regularly to see if they are ready.
- You can stuff them with vegetables, meat, tofu, egg, vegan cheese, whatever you like.
