Carb-Conscious Broccoli Tortilla Recipe

This is a super-easy recipe, and it was important to me to try something that is carb conscious and that I can fit into my diet. I typically eat this as a morning snack, stuffed with veggies and egg, sometimes tofu.

Calories: 56 kcal per 1 broccoli tortilla

Carbs: 6g/per tortilla

Ingredients (makes 2)

  • 300 g frozen broccoli
  • 10 g psyllium husk
  • salt
  • 1-2 tablespoon water

Instructions

  1. Measure the broccoli, no need to cook it. Boil water, and pour it onto the broccoli. Let it sit for 3 minutes.
  2. Add the salt and the psyllium husk, and the water. Start with a smaller amount of water and add more if needed.
  3. Blend it up.
  4. Place a baking sheet into the baking pan.
  5. Make two balls, and flatten them into round shape.
  6. Bake them in the oven for 18 minutes. Check regularly to see if they are ready.
  7. You can stuff them with vegetables, meat, tofu, egg, vegan cheese, whatever you like.
