I’ve been looking for a dish that is healthy and suits everyone’s needs in the family (both vegetarian, gluten free, and dairy free). It’s easy to prepare, it’s delicious, full with nutrients. It’s the perfect, healthy to-go food. Great for school and work. Even my pickiest eater enjoyed it. Try this vegetable delight, and share your thoughts with us.

Ingredients for the dough:
- 6 oz (170g) oat flour
- 4 oz (113g) unsalted butter
- 1 egg
- 1.7 fl oz (50ml) cold water if needed
- 1/2 teaspoon salt
Ingredients for the filling:
- 2 eggs
- 17.6 oz (500g) broccoli
- 8.5 oz (240g) red lentil
- 1/4 cup vegan mozzarella (my favorite is this one from Aldi: https://shop.aldi.us/store/aldi/products/19148607-earth-grown-vegan-mozzarella-style-shreds-8-oz
- salt
- pepper
- garlic
- onion
- nutmeg
Instructions for the dough:
- Melt the butter a bit so that it is easier to work with it.
- Add the oat flour (you can substitute it with gluten-free bread or pizza flour), the salt, the eggs, and mix them together.
- Set the dough aside for 10 minutes.
- Heat the oven for 375F.
- Flatten the dough in a baking pan, put the pan into the oven.
- Bake it for 15 minutes.
Instructions for the filling:
- Cook the broccoli in a pan, add some salt, garlic and onion and nutmeg.
- Cook the red lentil as well.
- Put them in a bowl, add the spices, blend them together, add the eggs and the vegan mozzarella cheese.
- When the dough has been baked, put the filling onto the top, flatten it, and place it into the oven for another 35 minutes.
IMPORTANT: If you have celiac disease, only use oat that is certified gluten-free.
