Gluten-Free Friendly Zucchini Oatmeal: A Delicious Twist on Breakfast

Do you love oats but are tired of having a sweet breakfast every single morning or want to eat oats other times of the day? Give this recipe a try!

Do you struggle with a lot of sweet cravings throughout the day? We all heard that starting your day with a savory breakfast can set your stomach in a savory mood for the whole day (doesn’t sound scientific this way, but that’s what we all think when we hear dietitians explain the science behind it right?). There might be fewer people though who heard about the power of zucchini in your breakfast. It contains thylakoids which help shut off the hunger signal. (This is not to make you eat less, but to make you more full when you did eat a good amount of nutritious breakfast.)

Of course this is not only for breakfast. Eat it whenever you want! Hope you like it!

Ingredients:

  • 40 g (1.41 oz) rolled oat
  • 1 zucchini (size does not matter)
  • 85 g (~3 oz) spinach (frozen or fresh)
  • 85 g (~3 oz) pea
  • frozen edemame on top (optional)
  • 200 ml (~6.76 fl oz) water
  • 1/2 teaspoon salt

Instructions:

  1. Put the rolled oat, the spinach and pea in 200 ml (~6.76 fl oz) water, and cook them until your desired oat texture.
  2. Add the salt.
  3. Enjoy!

IMPORTANT: If you have celiac disease, only use oat that is certified gluten-free.
