This cookie is quick, easy and delicious, it really is! It is high in fibre content, perfect with tea or coffee. This amount is for 12 cookies.

Ingredients:
- 100 g (3.52 oz) rolled oat
- 100 g (3.52 oz) oat flour
- 1 egg
- 100 g (3.52 oz) melted unsalted butter
- 1/2 teaspoon baking soda
- 22 g (0.77 oz) sweetener – or 10 packets of Truvia sweetener (https://www.truvia.com/products/truvia-packets)
- pinch of salt
Instructions:
- Put the melted butter, oat flour, egg, baking soda, salt and sweetener into a bowl.
- Mix them well together.
- Make little balls from the dough.
- Place them on a baking sheet, put baking sheet paper under the balls.
- Flatten them.
- Bake them for 12 minutes on 375°F (190°C).
- If you want to, you can add dried fruit into the dough. Here I melted chocolate on their top until the cookies were hot.

IMPORTANT: If you have celiac disease, only use oat flour that is certified gluten-free.
