Socca recipe is quick and easy, so it suits really well into your veganuary. My daughter took the challenge and we wanted to share one of the vegan food she has eaten this month. Even though it does not seem to be, but it’s a really quick one, and you do not have to make a big portion if you just want to give it a try. It comes with three different vegan dips.
Ingredients (for one person):
- 30 g (~1 oz) chickpea flour (either white or black)
- 1/4 cup of water (if you use black chickpea flour, add a little more water)
- 1/4 teaspoon salt
- pepper
- 1 tbsp olive oil (you can leave it out)
Ingredients for a bigger portion:
- 50 g (~1.8 oz) chickpea flour (either white or black)
- 1/3 cup of water
- 1/4 teaspoon salt
- pepper
- 1 tbsp olive oil
Preparation:
- Place the chickpea flour into a bowl, then add the water to it gradually, mix them together.
- Add the olive oil (we usually leave this out).
- Let it sit for about 20 minutes.
- Put a little bit oil into a pan, and pour the mixture into the pan.
- Wait until tiny bubbles form, then flip it and bake the other side of the socca.
- Fill it with green pea dip/Great Northern bean dip or refried bean dip (home made from pinto bean). Find recipe here: https://noglutencreations.com/2025/01/21/gluten-free-vegan-dips-for-flat-breads-or-gluten-free-crackers/
