Healthy Gerbeaud Slice Recipe for Christmas

The original Gerbeaud slice was invented by confectioner Emil Gerbeaud who moved to Budapest in the 1800s. It is a layered cake with walnut and apricot jam with chocolate on the top. As we do not eat sugar in general, and we use gluten-free flour, below you can find a healthier version of the original one. This cake cannot be missing from the Christmas table of many Hungarian families.

Ingredients:

For the dough:

  • 45o g (16 oz) gluten-free flour, for this recipe I used a gluten-free keto baking mix
  • 30 g (1 oz) granulated sweetener, I use this one: https://www.truvia.com/products/truvia-packets
  • 2 teaspoons of baking soda
  • 300 g (10.5 oz) butter
  • 1 egg
  • 100 g (3.5 oz) sour cream or vegan alternate

For the filling:

  • 300 g (10.5 oz)ground nut, I used pecan because we prefer its milder taste to that of the nut
  • 50 g (1.7 oz) sweetener
  • 360 g (~ 1 bottle or 12.7 oz) apricot preserve (sugar-free)

On top:

200 g (7 oz) dark chocolate chip

Preparation:

  • Put the flour, the sweetener, the salt and the baking soda in a bowl. The butter should stay cold, I grated it and added to the bowl as well.
  • Mix the ingredients and work them together. You will get a dough that weighs ~900 g (~31.7 oz).
  • Divide the dough into 4 pieces, the dough should be 225 g (7.93 oz) each.
  • Place them into the fridge for an hour.
  • After one hour, flatten the dough balls one after the other. As this dough is made from gluten-free flour, it is a bit harder to work with it, so I recommend using baking sheets for the flattening. So you need 2 pieces of baking sheet and place the dough between them and with a rolling pin flatten the dough.
  • Place a baking sheet into the baking pan.
  • Place one sheet of flattened dough into the pan.
  • Spread 1/3 of the apricot preserve, and sprinkle the ground walnut or pecan on the top.
  • Repeat this 2 more times.
  • Place the last dough on the top of it. The top will be on the bottom as we will flip the cake out of the baking pan.
  • Put it in the oven for 35 minutes at 190°C (375°F).
  • When it baked, flip it out from the baking pan onto a tray.
  • Place the chocolate chip onto the top of the cake, and spread it with a knife.
  • Wait until it cools down, and then it can be sliced.
