Healthy Gluten-Free Lava Cookies Recipe

I guess you have already noticed that we like our recipes stay not only gluten-free but sugar-free at the same time. Lava cookies are usually made with a lot of sugar, the flour and sugar ratio is 1:1. This lava cookie is made with oat flour and it contains only 3 tablespoons of honey. Try the recipe, it’s really delicious and you do not have to worry about gaining weight during the Christmas holiday.

Ingredients:

  • 50 g (1.76 oz) cocoa powder
  • baking powder
  • 150 g (5.3 oz) gluten-free oat flour
  • 22 g (0.77 oz) sweetener – or 10 packets of Truvia sweetener (https://www.truvia.com/products/truvia-packets)
  • gingerbread spice (spices: ground cinnamon (2 teaspoons), ground cardamom (0.5 teaspoon), ground nutmeg (3 pinches), ground cloves (0.5 teaspoon)
  • 2 eggs
  • 3 tablespoons of honey
  • 60 g (2.11 oz) unsalted butter (melted)
  • some sweetener for the coating

Preparation:

  1. Put the dry ingredients into a bowl then add the liquid ingredients. Mix them together to get a ball.
  2. Place it into the fridge for 1 hour.
  3. After 1 hour, make little balls from the dough.
  4. Put them into the preheated oven (375°F) for 13 minutes.
