Healthy, Gluten-Free Pumpkin Muffins with Almond Flour – Halloween is here!

Ingredients:

At this time of the year, we like to eat a lot of pumpkin. it’s healthy, nutritious and delicious. We can bake it with some spices, or we make a soup or we bake a muffin. This muffin is made by using the leftovers from the soup. It’s worth a try.

  • 1 cup of almond flour
  • 1 cup of gluten-free flour
  • 3 eggs
  • 10 pockets of sweetener
  • 1/2 tablespoon of baking soda
  • a pinch of salt
  • 1/2 tbsp of cinnamon
  • 4 oz butter

Instructions:

  1. Melt the butter in the microwave.
  2. Add all the ingredients and mix well.
  3. Place the dough into muffin baking cups, and bake them for 20 minutes on 375°F.
