
This small apple cake is soft, sweet, gluten-free and sugar free at the same time. It is excellent for your coffee or tea break and wonderful if you want to start your weekend relaxed. Bake this the previous day and enjoy it for your next breakfast with a good cup of coffee.
Ingredients:
- 10.5 oz (300 g) apple
- 1.4 fl oz (40 ml) almond milk
- 2.1 oz (60 g) unsalted butter
- 1 half teaspoon of cinnamon
- 1 half teaspoon of baking powder
- 1 teaspoon of lemon juice
- 2 eggs
- 8 packets of sweetener
- 3.5 oz (100 g) gluten-free flour
- 0.7 oz (20 g) gluten-free oat flour
- a pinch of salt
Instructions:
- Peel the apples, cut them into cubes, place them into the hand blender, add the almond milk and blend them together.
- Pour the apple juice you created into a mixing bowl and add the spices, the butter, the eggs, the sweeteners, the salt and the two types of flour. Mix them well.
- Pour them into smaller baking pan and place it to the oven.
- Bake it at least 25 minutes on 375°F.
