Gluten-Free Crepes with Chocolate Pudding Filling

INGREDIENTS:

For the crepes:

  • 4 tablespoons of oat flour
  • 5 tablespoon gluten-free flour
  • 2 eggs
  • 1/2 cup of milk or plant-based milk
  • 1 cup of water
  • pinch of salt

For the filling:

  • European Dr. Oetker pudding (chocolate/vanilla), or your favorite filling

INSTRUCTIONS:

  1. Put all the ingredients in a bowl and mix them well.
  2. Pour about one ladle amount onto a preheated oily pan.
  3. Bake it until the sides start to fold over.
  4. Flip it and bake the other side for about 30-45 more seconds.
  5. Our favorite filling is the European style chocolate pudding, but it works well with any kind of filling, like any kind of fruit jam or cocoa or cinnamon powder.
