
When I was a kid, I did not like bundt cakes. When I was invited to birthday parties, moms sometimes baked bundt cakes besides the “regular” birthday cakes. It was only when I grew up and started to run my own household I gave it another try and I realized it is actually very delicious. I tried to bake it with gluten-free flour, and it turned out to be very delicious and easy to make. Recipe below.
Ingredients:
- 4.4.oz (125 g) butter
- 12.3 oz (350 g) farmer’s cheese
- 3 eggs
- 7 oz (200 g) gluten-free flour
- 200 ml almond milk
- a pinch of salt
- 1 teaspoon of baking powder
- 15 small packets of sweetener
Instructions:
- Separate the eggs
- Mix the yolks with the farmer’s cheese, the flour, the salt, baking powder, almond milk and preferred amount of sweetener. Make sure that it is a smooth dough.
- Whip the egg whites until they don’t fall out when you flip the bowl they are in upside down. (If you are a beginner, trust me you will see when the egg whites have been well whipped. Don’t experiment with flipping the bowl if you don’t feel comfortable with it.)
- Carefully mix the egg whites into the dough mixture. If you are not careful with it all of the air bubbles in the egg whites will be gone, and you will not get a fluffy bundt cake.
- Put the mixture in a bundt pan coated with butter and flour. Make sure to coat the whole pan since you don’t know how high the dough will rise, and you don’t want it to stick to the pan.
- Bake it in a preheated oven at 350 F for roughly 45 minutes.
- At the end check it with a toothpick. If there’s dough on the toothpick when you take it out of the cake, it needs some additional time in the oven.
- I personally take the bundt cake out of the pan when the cake is still warm, but you can wait until it completely cools off.
Tip: if the dough is too thick before adding in the whipped whites, add about two-three tablespoons of the whipped egg whites, and mix it in like you normally would, without being careful. This will make the thick dough a little bit more runny and easier to work with.
