
Since my daughter is on gluten-free diet, she tries to invent some new recipes. To be honest, it’s not so easy to bake a homemade muffin that tastes the same as its original version. She did not give it up and she experimented as long as she managed to bake a muffin that is soft and delicious, and it’s important that it does not contain any sugar. We used a little bit of banana to give a sweet taste to it. This one below is made with chocolate chips but we tried it with poppy seed as well and it is delicious with it, too.

Ingredients:
- 0.53 oz (15 g) butter
- Half a banana
- 1 egg
- 3.9 oz (110 g) gluten-free pancake mix (see Dori’s homemade gluten-free pancake mix recipe here:
- 1.35 fl oz (40 ml) half and half or milk substitute (any brand)
- cinnamon according to your taste
- 2 pockets sweetener
- chocolate chips as much you want/option 2: 1 tablespoon of poppy seed
Instructions:
- Smash the banana.
- Add the egg, the sweetener, the milk, the cinnamon and the pancake mix.
- Mix them well together.
- Bake it in air fryer or in the oven for 30 mins on 325°F.
