Giant Gluten-Free Muffin with Chocolate Chips

Since my daughter is on gluten-free diet, she tries to invent some new recipes. To be honest, it’s not so easy to bake a homemade muffin that tastes the same as its original version. She did not give it up and she experimented as long as she managed to bake a muffin that is soft and delicious, and it’s important that it does not contain any sugar. We used a little bit of banana to give a sweet taste to it. This one below is made with chocolate chips but we tried it with poppy seed as well and it is delicious with it, too.

Ingredients:

  • 0.53 oz (15 g) butter
  • Half a banana
  • 1 egg
  • 3.9 oz (110 g) gluten-free pancake mix (see Dori’s homemade gluten-free pancake mix recipe here:
  • 1.35 fl oz (40 ml) half and half or milk substitute (any brand)
  • cinnamon according to your taste
  • 2 pockets sweetener
  • chocolate chips as much you want/option 2: 1 tablespoon of poppy seed

Instructions:

  1. Smash the banana.
  2. Add the egg, the sweetener, the milk, the cinnamon and the pancake mix.
  3. Mix them well together.
  4. Bake it in air fryer or in the oven for 30 mins on 325°F.
